    Takamichi Saeki, who cuts hair in a smartly minimalist Nolita loft, is a master of the well-done undone hair that lots of men in this town spend years striving to perfect. His cuts are fussy and exact, but the effect is miraculously mellow, which is why he’s become the go-to trimmer for many of the city’s groovier guys. Saeki prides himself on the elegant grow-back, meaning the cut looks good weeks after it’s been done—which, considering a cut starts at $95, is a good thing. An appointment with Saeki isn’t just business. One of his favorite discussion topics, after all, is sports, and if you come at the end of the day, he’ll serve you a nice glass of whiskey.
