    S10 stands for sub-10 percent body fat, and founder Stephen Cheuk works obsessively toward that goal for his classes of no more than eight people ($50). He starts with height, weight, and body-fat measurements for every client, as well as an early assessment of mobility, flexibility, and strength observed through a series of basic exercises (lunges, planks, squats). Then he devises a workout tailored to your trouble areas, incorporating aggressive moves (prowler pushes, band sprints with Cheuk tied to your back), pairing you off with partners for motivation and tracking (and recording) your improvement every step of the way.
