The Bromberg brothers, Bruce and Eric, are no strangers to fried chicken, which is just one of the signature dishes in their astoundingly eclectic repertoire. But the version they’ve debuted at their new Columbus Circle outpost deserves special mention: Coated minimally with a characteristically Brombergian mixture of matzo meal and flour, it’s then seasoned with a spice blend of togarashi peppers, paprika, cayenne, and sea salt; served on a bed of shredded napa cabbage; and garnished with a sweet-and-spicy dipping sauce made with fresh wasabi, and honey the brothers import from Mexico themselves. The bird emerges juicy and tender with a great crispy crunch. Like the appealing and stylish restaurant itself, it’s got Japanese flavor and the Bromberg touch.
