“Everyone wants me to open another Taïm,” says Einat Admony, the Israeli chef of Taïm and Balaboosta, who has so far resisted their entreaties. But that doesn’t mean she and her partners can’t spread the falafel gospel via their sleek new Taïm Mobile. Thanks to a nimble cook and some precision frying, the truck dispenses well-constructed sandwiches and sprightly platters of the same exceptional quality as the West Village storefront—plus a new quinoa-and-chickpea salad that is actually bolstered, and not done in, as these things often are, by the inclusion of cranberries. Fresh smoothies, too, including the signature date-lime-banana. Newly launched dinner service is a relative secret, crowdwise—find the truck’s whereabouts on Twitter.
