    The city is in the midst of a great lamb renaissance, it’s true. But if we had to pick one dish among the delectable avalanche of lamb tartares, lamb bellies, and newfangled lamb tacos around town, it would be these little riblets, which are charred to a perfect tenderness and topped in the Southeast Asian way with fish sauce, frizzled shallots, peanuts, and sprigs of coriander. Pay attention to the hidden slices of eggplant, which match the soft texture of the lamb while balancing out its fatty richness.
