In his quest to gussy up the downright earthiness of celery root, Daniel Humm took inspiration from the old haute showstopper poulet en vessie. The root vegetable is whittled down to the size of a black truffle, then braised inside an inflated pig’s bladder. The offal balloon is paraded through the dining room in a shiny copper pot, with spoonfuls of truffle-infused chicken glace ladled over the dish tableside. Finally, the glazed sphere is plated with a stash of black truffles tucked under a pool of celery-root purée. Pomp and fine-dining choreography aside, the outcome is undeniably delicious.
