    When New Yorkers renovate their notoriously minuscule kitchens, the planning is all about maximizing the usefulness of every millimeter. Dave Burcher, co-founder of In House Kitchen Bath Home, has a shipbuilder’s approach to space. If he calculates that an oven door will clear a drawer handle by a quarter of an inch, then he’ll make sure it does. Most kitchen designers deal in one or two brands of cabinetry, and In House sells Wood-Mode and Brookhaven, so if you crave a handmade pantry in solid French walnut, you’ll have to look elsewhere. But if you want a storage slot for a chopping board, a custom drawer for Grandma’s Dutch oven, or a bench that stows invisibly by sliding between two tiers of cabinets, then Burcher is the man to find room for it.
