Says Patrick Martin of Heritage Foods USA, who handles most of the city’s artisanal meat: “We consider it one of the purest, most ethical meat supplies in the country.” Ethical? “It’s just a hard-core all-natural product, from the way it's raised, roaming freely its whole life, to the way it’s fed, to the humane way it’s slaughtered. No animals anywhere are treated better.” That’s all well and good, but what about Kurtis — is he as imposing in person as he is on TV? “He’s very intimidating,” Martin admits. “But his beef is very easy to love.” Said beef will arrive at markets in two weeks and should start showing up on Manhattan menus within a few weeks after that.
