This may be a pipe dream for Manhattan carnivores, but we’re told by a source close to Jonathan Waxman that the Barbuto chef is in the process of leasing the former Kurowycky Meats space on First Avenue. Waxman will call the place Meat and will use the old smokehouse equipment to create a menu of artisanal smoked-meat dishes. Waxman did not respond to repeated requests for comment. The project is in its early stages, but it sounds too cool not to happen.
