Michael White Opens Yet Another Italian Restaurant

Alto and Convivio chef Michael White has been busy lately, between the relaunch of L’Impero and plans for an Italian seafood restaurant in the San Domenico space. But White always makes time for a new Italian restaurant, and this time it’s Due Mari Pesce in New Brunswick, New Jersey. It’s a sister restaurant to White’s other little-known (but wildly successful) New Jersey place, Bernardsville’s Due Terre, and “a kind of dress run for Marea,” says White. “It will be coastal Italian seafood, the great flavors of Venice and Liguria. All my suppliers in the city go out there, and I also have access to all New Jersey produce and seafood, all those scallops and black bass and stripers! With Italian food, it’s 80 percent ingredients and 20 percent technique, so the less I do with it, the better-received it will be.”
