Cesare Casella's Salumeria Rossi (283 Amsterdam Avenue, between 73rd and 74th Streets) was open yesterday for the Italian press — the lucky few enjoyed prosciutto and truffled cacciota cheese with foccacia. The friends-and-family routine comes next; Gael Greene's calling October 15 for the public opening. And in unrelated Casella news, of his time in Secession's kitchen with David Bouley, Casella says, "Bouley says he is liking the calamari but it would be better with some orange and lemon. I say 'Fuck you if you want to be French. You ask me for Italian. Fuck you orange and lemon.'" [Insatiable Critic]
