But Los Angeles, which is in no short supply of these things, just got another one, this time of the high-caliber variety: Meet the Sushi Institute of America, co-founded by Katsuya Uechi, executive chef and owner of L.A.'s Katsuya chain, and Noritoshi Kanai, the guy who brought edamame to Cali in the sixties. The New York equivalent of this sort of training? Uh, we don't have one. But you may still be able to take some maki-making classes at the New School! [AP]
