But Los Angeles, which is in no short supply of these things, just got another one, this time of the high-caliber variety: Meet the Sushi Institute of America, co-founded by Katsuya Uechi, executive chef and owner of L.A.'s Katsuya chain, and Noritoshi Kanai, the guy who brought edamame to Cali in the sixties.
