Country’s Willis Loughhead Moves to Table 8 and Cooper Square Hotel

The Cooper Square Hotel has picked Country’s former chef de cuisine, Willis Loughhead, to be its executive chef and the chef de cuisine at Govind Armstrong’s restaurant, Table 8. When he took over at Country last spring, Loughhead told us his style was “characterized by a lot of olive oil, vinegar, fresh lemon — a lot of brightness.” Regarding his new gig running Govind Armstrong’s kitchen, he tells the Feedbag, “We’re both very motivated towards seasonal stuff, into curing everything in house, alternative cures for seafood, and all kinds of new marination techniques.” The hotel and restaurant open in January.
