There was a big to-do when Balthazar let go of its bathroom attendants (“yes, [they’ve] been flushed out,” Keith McNally said), but this weekend we found them awkwardly doling out paper towels as usual. The men’s-room attendant told us he had only been gone for two weeks. Good to see someone has thought better of downsizing in this economy.
