James Beard Foundation Finds That American Food Exists, But Nobody Knows What It Is

The James Beard Foundation does more than just host dinners and give out awards — one of its missions is to promote that quasi-mythical entity, American cuisine. It was Beard himself who was the concept's most famous promoter, and that's a major part of the organization's mandate. So the arrival of the foundation's report on “The State of American Cuisine” has the feel of a major document. The authors of the paper surveyed 248 random respondents, plus an unspecified number of experts. What everyone will take away from it is the fact that, in its survey, the hamburger led all its rivals as the Great American Food (barbecue was second). And we can certainly agree with that, God knows. But for us, what's most telling about America is that while 90 percent of the survey's respondents agreed that there was such a thing as American cuisine, nobody could identify what it is.

‘Forbes’ Eyes Tomorrow’s Celebrity Chefs

Ah, to be a rising star in the chef world. The James Beard Rising-Star Chef award is right around the corner, tonight Food & Wine will announce its Best New Chef awards, and this very morning Forbes has a slideshow of the celebrity chefs of tomorrow. Forbes picks ten chefs to watch, no fewer than four of whom are here in New York. Fatty Crab's Zak Pelaccio, Jehangir Mehta of Graffiti, Cesar Ramirez of Bar Blanc, and April Bloomfield of the Spotted Pig all got the nod. The judging panel is a strong one, including chef Christian Delouvrier, Will Blunt of Starchefs, and Susan Ungaro of the James Beard Foundation.

The Beard Foundation is taking a battering these days; even on the eve of its big night, its finances are being questioned, and foodies and cooks left and right have had a field day abusing them on the Web. And let's not forget the huge embezzling scandal that engulfed the organization a couple of years ago. But there’s at least one chef who will speak up for the awards: Andrew Carmellini of A Voce.

Ruhlman Blasts Beards; Waverly Inn Impedes Ambulances

Michael Ruhlman blasts the Beards in his blog, questioning the organization’s whole purpose: “I’d like to know exactly what it is they intend to do, beyond give themselves an expensive party once a year.” [Ruhlman]

Yum Brands, owner of the E. coli–ridden Taco Bell and the rat-infested Taco Bell–KFC, is making all kinds of money despite two PR disasters in one year. [International Herald-Tribune]

Beard’s Finances Questioned; Restaurants Manipulate Zagat

The Beard Foundation, in the spotlight as Monday’s awards approach, is still on shaky ground financially, and questions still linger about the way it spends its money. [NYT]

Restaurants are lobbying customers to vote for them in the Zagat survey, a trend nobody likes, but which few in the business can stop or resist. [NYP]

The days of the fat chef seem to have been passed, leaving mostly whippet-slim cooks to inherit the world’s kitchens. [Waitrose via Serious Eats]
