Jean-Georges Vongerichten Stands Up for Absentee Chefs

Earlier this week, Steve Cuozzo of the Post called out chefs for not being in their restaurants. How good is a kitchen when the chef is never in it? Guest blogging for T Magazine's "The Moment," the travel guru to the fabulous Laurent Vernhes asked the biggest absentee chef of them all, Jean-Georges Vongerichten, to defend the practice. Vongerichten, who plans to open 50 restaurants worldwide in the next few years, explained himself:
“Many years ago, Paul Bocuse was asked the following question: ‘Who is cooking when you’re not in the kitchen?’ And his response was, ‘The same people as when I am in the kitchen!’

Samuelsson and Ripert Sell New York to the Tourists

The last wave of “Just Ask the Locals” tourism ads featured Danny Meyer, and this time around the city has selected chefs Eric Ripert and Marcus Samuelsson — along with Diddy! — to dish on their favorite spots. Ripert give props to the wood-burning oven at Peasant — “absolutely fantastic” — while Samuelsson fingers Aquavit (for shame!), as well as Jean Georges, Luger, Republic, and wd-50. For late-night eats, he's all about Blue Ribbon Brasserie, Florent (despite its imminent demise), the Spotted Pig, and “anywhere in Chinatown” — although, except for Wo Hop and Noodletown, places in C-town tend to close on the early side. So if you see confused tourists wandering the darkened streets of Chinatown or attempting to gain entry into a shuttered Florent, you know whom to blame.

Adam Platt Sees ‘Top Chef’ Slowly Unraveling

After a fairly straightforward dessert contest judged by Jean Georges' Johnny Iuzzini, last night's Top Chef episode took a turn for the bizarre with an Elimination Challenge inspired by the Second City improv company. Random colors and emotions were paired with ingredients, and the cheftestants ordered to improvise dishes like “yellow vanilla love” and “magenta drunken Polish sausage.” The results were predictably revolting, and we and Adam Platt settled in to discuss it immediately afterward with heavy hearts.

World's Best Restaurant List Released, and Europe Reigns, Again

Why should we care what the San Pellegrino company thinks are the world's 50 best restaurants? And yet, as with Michelin, Zagat, and every other ranking, we always do. San Pellegrino's angle is that they rank the top restaurants worldwide, thus awaking nationalist fury in every slighted country. (The list is determined by a global poll of chefs, restaurateurs, and food writers.) Which, as usual, means every country other than Spain, since again El Bulli has come out on top, followed by England's the Fat Duck, France's Pierre Gagnaire, and another Spanish entry, Mugaritz. But — a consolation to the U.S. — next on the list come back-to-back Americans: the French Laundry and Per Se. After that, the U.S. falls off the list until Jean Georges at 17, Le Bernardin at 18, and Chicago's Alinea at 21. No doubt the list has a major snob appeal and will make a fine to-do list for international bons vivants.

Two Bruni Stars for Mia Dona; Mostly Good Things for Merkato 55

Frank Bruni rewards Michael Psilakis for his practical efforts to create, in Mia Dona, an affordable restaurant with two stars. (And possibly to make up the third star Anthos should have gotten.) [NYT]

Overall, Restaurant Girl cottons to Merkato 55, though she reserves her fullest praise on account of a few “flubs” and boring desserts. She likes the energy and audacity of the place, though. [NYDN]

Paul Adams has more or less the same sentiments: He likes the place, but it “doesn't dazzle.” Then there are these words, which no doubt the restaurant dreads reading: “not as flavorful as the version I get for half the price uptown.” [NYS]

New York Looking Good for Beard Awards 2008

The James Beard Award nominations are out, and the news for New York is good, though not as overwhelming as last year. Anthos is in there carrying the torch for Best New Restaurant nationally; Dan Barber of Blue Hill is a finalist for Outstanding Chef; and two of the five national nominees for Outstanding Restaurant are New York blue-chippers: Jean Georges and Gramercy Tavern. (The latter is a huge triumph for both Danny Meyer and chef Mike Anthony, given the restaurant’s long association with Tom Colicchio and its brush with being taken for granted.) As for the always-longed-for Rising Star Chef award, there’s a New Yorker in there, too: Gavin Kaysen of Café Boulud.

We are pleased to announce that New York received a few nods, too. Two articles — "My Empire of Dirt" and "Cartography" — were nominated for "Magazine Feature Writing Without Recipes," and Grub Street was nominated for "Multimedia Writing on Food."

Ungrammatical Forum Poster Tossed From Jean Georges, Gets Revenge in Ungrammatical Forum Post

We’re always leery of the strange, strange world of Abbe Diaz and her online forum, PX This, but a media alert titled “Blogger Tossed From Jean Georges” was difficult to resist. As you might expect, Diaz — a former maître d’ at Jean Georges who wrote a dishy book about her experiences in the business — was in fact the blogger tossed, a cringe-inducing event publicized by the pilloried herself. (All of Diaz’s entries on PX This read like interminable text messages tapped out by the jittery, manicured thumbnails of an ex-model at Rose Bar at 4 a.m.) We include it here entirely for purposes of education: Remember, if you dog someone you worked for in a book, don’t go to his restaurant unless you know he won’t be around.

The Man Who Ate the World, British restaurant critic Jay Rayner’s tour of the planet's great restaurant cities will be coming out soon, as Gawker noted yesterday. Its piece lingered over Super Mario’s latest profanity-laced anti-blogger tirade, which was almost as enjoyable as his last one. But having read the New York chapter, we were hit by how much other good stuff was in it.

‘Top Chef’ Recruits Seven NYC Toques

Top Chef has announced its new cheftestants, and we, like everybody else who got the press release, were delighted to see that there are even more NYC cooks than ever before, from restaurants including Mai House, Buddakan, Public, 24 Prince, and Dos Caminos. You can’t go by where they work, though: Among last season's rivals, Casey was a “personal chef,” whatever that means, and made it to finale, while poor Lia was at Jean Georges and got bounced halfway through the season. Still, we’re already thinking deeply about this crew — and looking forward to making fun of them in IM conversations a few months hence.

Nicole Kaplan Leaves Del Posto

Major developments on the pastry front: Del Posto's head pastry chef, Nicole Kaplan, who soared to fame as the chef at Eleven Madison Park (and, incidentally, as the creator of the Shake Shack's custard), has left the restaurant. We had heard that it was to head the dessert program at the St. Regis Hotel or, possibly, one of its restaurants, but the hotel denies this. (We’re still trying to reach Kaplan.) Del Posto GM Alfredo Ruiz confirms that Kaplan has been gone since January 1, but that her full staff is still in place and doing her menu as before. Co-owner Joe Bastianich says, “The split was amicable, and we wish Nicole nothing but the best in everything she does.” Bastianich added that the restaurant is looking at a couple of people and that, when the hire does happen, it will be “big news.”

Jean Georges isn’t a restaurant known for its attachment to experimental cuisine; if anything, J-G Vongerichten’s highly formal flagship is considered a bastion of old-school tablecloth dining. But Vongerichten has always been in the gastronomic vanguard, and he and chef de cuisine Mark Lapico are among the city’s most ardent admirers of the CVap oven, a controlled-humidity technology they use so much that there's three of them in the kitchen.

It's Z-man's happening, and it freaks us out!

After we had some sport with Johnny Iuzzini earlier this week, the dessert master was pretty steamed — he even asked us to take him off our list. No problem, but wouldn’t you have thought we would be off his? Not so! Big Dreams for Chodorow's Next Showstopper; Perv Attacking Women Outside the Box

Cuozzo fantasizes about the possible successes Jeffrey Chodorow could develop if he signs a lease on the enormous space at Broadway and 63rd Street. They include stellar risotto, traditional dim sum, and haute Lebanese — if only he doesn’t “blow it on another howler like Rocco’s or a limping dud like Kobe Club.” [NYP]

Jean-Georges's $40,000 Light Makes You Look Like a Million Bucks

When Jean-Georges Vongerichten retooled his namesake restaurant, his lighting designer Herve Descottes wanted, in his words, “to bring a little bit of attention to the center of the room” — and boy did he! The Frenchman spent six months and over $40,000 working with Seattle firm Neidhart Lighting to create a steel fixture that looks like a shitake mushroom and is also “a little bit sensual.” Each lamp is trimmed with reflective gold leaf. Three 35-watt halogen bulbs are controlled by a computer, with different settings for lunch, early dinner, and post–8 p
