Murray Hill/Kips Bay: Pamplona will have its own celebration of the running of the bulls from July 7 through the 12th by offering a meaty prix fixe that ends with fried milk topped with dulce de leche ice cream. [Grub Street]
Red Hook: When the Grindhaus opens, according to its owner, the spot will be "a boisterous sausage parlor." To prepare for the debauchery, she's getting front-of-the-house training at Ssäm Bar. [Eater]

The Fruits of Ingenuity, in This Week's Issue

The theme of this week’s issue, at least that of its food content, was immediately obvious to us: ingenuity. In a city so stocked and teeming with restaurants, how can chefs find niches to fill? A noodle bar is reconfigured as a poor man’s Masa and earns four stars from Adam Platt; a wine bar forbidden from hard liquor uses wine, port, and sherry to create cocktails; and a restaurant catering to wealthy clients produces foie gras–flavored dog biscuits. Rob and Robin, in their tireless rounds, suss out such acts of creativity but also stop to appreciate the simple things, like the chocolate cookies at Payard Patisserie, say, or a promising Japanese restaurant opening on 8th Street, or the grilled-cheese-sandwich program at the bar at Smith’s. Add to this an inexpensive Argentine grill encountered by Gael Greene, and it’s another week in the life of New York, and New York.

Calorie Law Doomed?; Colicchio Hasn't Been to Ko Either

• The very study that was used by the Health Department to crusade for mandatory calorie posting in food chains may now be used by defense lawyers to undermine the law’s future. [NYS]

• Some Lower East Siders are not stoked about Bruce Willis opening the Bowery Wine Company, so they’re going to buy a pig, name it Bruce, and then eat it. [NYP]

• Wine bars are everywhere, and, thankfully, they’re a lot less stuffy than they used to be. [NYT]

Economy Shrinks Portions, Swaps Ingredients; a Ko Reservation Fake-out

With food coasts soaring, high- and low-end kitchens are taking measure to reduce portions, swap out costly ingredients, and serve more dishes with higher profit margins. [WSJ]

In related news, it doesn’t look like wheat prices will drop anytime soon: “Consumption has exceeded production in seven of the last eight years.” [NYT]

The online reservation page for Ko was live for ten minutes on Friday, but now you need a password to enter it. Still, at least you can add the URL to your bookmarks and check it every hour. [Eater]

Did you know that nine large feasts from Boston Market can add up to $1,800? A Queens woman found that out, but since she was using fake checks, she didn’t care too much. [NYP]

Pizza Prices Definitely Going Up; Bruni Loves Björk

There’s no doubt about it: Pizza prices are going up. A survey of pizzerias around town — well, below 14th Street, anyway — reveals that slice prices are almost unanimously going to increase over the next few months, owing to the soaring price of flour. [City Room/NYT]

Though the National Labor Relations Board ruled more than two weeks ago that Saigon Grill‘s deliverymen must be rehired with full back pay, delivery service at both locations remains suspended and there are doubts about its returning anytime soon. [Villager]
