‘Top Chef’ Spike Leaves Mai House

Top Chef contestant Spike Mendelsohn has left Mai House, but don’t assume his departure is related to winning a reality show of some sort. According to Eater, Mendelsohn got the mitten after publicly stating that he would soon concentrate on his new D.C. burger restaurant. Eater also reported that Top Chef's Lisa "The Gorgon" Fernandes would replace Mendelsohn on the line, but Mai House owner Drew Nieporent denied that notion: “Lisa's not the chef. She and Spike are just friends from the show.”

Michael ‘Bun’ Hunyh Signs On As Chef at Rain

Gael Greene reports on Insatiable Critic today that Michael “Bun” Hunyh, of Mai House and Bun, has taken over at Rain — and this time, the restaurant’s owner, Stephen Scher, thinks the chef is going stay. Hunyh has developed a reputation as something of a rover, but according to Greene, Scher thinks the current deal is too good for Hunyh to walk away from: “We have promised each other we are committed to this project.” Huynh claims this is his first equal partnership. "I had a bad partner at Bun," he tells Greene. "Now is the first time anyone gives me an even deal.”

Old Singapore Will Live Again, in Chinatown; Breakfast at Centro Starts Today

Chinatown: Continuing the nightlife blast on the Bowery, mixologist Albert Trummer will open an "old Singapore"–style bar called Apotheke this summer, on the Chinatown end at 9 Doyers Street. [NYT]
Times Square: China Club will close this Friday and reopen on Saturday as the club Opera, with a fancy "new look for the dance floor." Because sanding the floor brings in the revelers. [Zagat]
Tribeca: Mai House is serving a $59 tasting menu by cook Spike Mendelsohn "based on the food he cooked on Top Chef." [NYS]
West Village: Centro Vinoteca started doing breakfast today. It includes dishes like baked eggs with sausage-and-bean ragout; breakfast pizzetta with egg, taleggio, and speck; and Nutella-filled crespelle. Free Wi-Fi comes with it. [Grub Street]

‘Bun’ Huynh Coming to the UWS?

After breaking the news that Stephen Starr’s restaurant group was on the market, Gael Greene now tells us that Michael “Bun” Huynh has made a deal with the Main Street Group (Calle Ocho, Django, BLTPrime) to do “something delicious on the Upper West Side, possibly at Rain.” The chef, who always seems to be going to or from another project, will still be at Bun, as well as Mai House. At this rate, Huynh could have more Asian restaurants than Zak Pelaccio!

‘Top Chef’ Recruits Seven NYC Toques

Top Chef has announced its new cheftestants, and we, like everybody else who got the press release, were delighted to see that there are even more NYC cooks than ever before, from restaurants including Mai House, Buddakan, Public, 24 Prince, and Dos Caminos. You can’t go by where they work, though: Among last season's rivals, Casey was a “personal chef,” whatever that means, and made it to finale, while poor Lia was at Jean Georges and got bounced halfway through the season. Still, we’re already thinking deeply about this crew — and looking forward to making fun of them in IM conversations a few months hence.

Liebrandt and Nieporent, Sitting in a Tree…

The impending collaboration between Drew Nieporent and Paul Liebrandt, whether at Montrachet or elsewhere, is probably the worst-kept secret in the restaurant business. But the hirsute restaurateur isn’t slowing down the rumor mill any with his latest high jinx. At a party at Mai House earlier this week, Nieporent was showing people candid pictures of Liebrandt that he had taken with his cell-phone camera. We followed up with the Montrachet mogul, and he insists that “it was just tongue in cheek, because of the way you people have been going on about Paul and I.” Well, that’s fine – but how did pictures of Paul Liebrandt fishing get into Drew Nieporent’s phone? Either there’s a serious man crush going on, or the two are about to do a restaurant together. (Or both.)

When we asked the great Daniel Boulud what he’s eaten this week, we were secretly hoping to hear confessions of Seven Layer Burritos at Taco Bell. We shouldn’t have been surprised when he reported that, with exceptions like Sunday brunch and the occasional sushi splurge, he eats 75 percent of his meals at his own restaurants. Luckily that didn’t make his food journal any less fascinating; not only did he give us the scoop on some spring menu additions and his new line of spices available this fall, but he actually did scarf a burrito.
