Delicatessen Will Go 24 Hours — We Have the Menu

Balthazar is no longer the go-to for late-night eats in Soho. Two weeks from now Delicatessen will be open 24 hours on Thursdays through Saturdays. Around 11:30 p.m. last night there were a couple dozen folks in the breezy dining room — a mix of Chelsea homoflexuals and girls dressed for the meatpacking district. Buffa’s this ain’t. At the end of a meal that included what we suspect will be the place’s must-get — Reuben fritters! — we were surprised to get a three-page satisfaction survey asking no less than 30 questions about the service, portion sizes, décor, music, lighting, and pricing. Sample query: “What was your least favorite dish and why? Please be as specific as possible.” Um. After a $14 absinthe Sazerac, we were in no place to fill out forms, but we did have the presence of mind to steal the menu for you!

Carroll Gardens: On July 26, Tall Order caterers will serve a Brownstone Dinner at their house, on the corner of President and Smith streets. [Bergen Carroll]

Our post about Bun running out of free food sparked a couple of angry comments: “I hope for this, they go out of business” and “I will never eat at Bun, any time of day.” One would-be moocher who got totally wok-blocked didn’t even have sympathy when he was told the manager had been in a car accident and the owner was out of town. But a friend of Grub Street e-mailed to gloat that on Thursday night at 4 a.m., he walked in sans reservation and ate the whole menu — and he’s got the photos to prove it. Only one other party was there. But on Friday around 2 a.m. another friend texted us to say, “You should go to Bun for free food, looks poppin.” Obviously things got a little too poppin’ shortly after that. We suppose your view of Bun depends on whether your plate was empty or full.

A reader writes: “What happened at Bun last night with their free food promotion?! They canceled reservations and didn't let anyone know! My friends and I showed up for our scheduled midnight reservation and a waitress rudely told us that they ran out of food … Which is of course a lie. You guys should report on what happened and how it inconvenienced so many people when they had everyone's emails and phone numbers.” No sooner said than done!

So excited were we at the prospect of Matty G’s new cocktail program at the Randolph, that we neglected to tell you about the place’s menu. Obviously, with its Milk and Honey pedigree, the focus is going to be on cocktails, but the sandwiches sound pretty good, too. Though, realistically, who is going to sit at the Randolph eating peanut-butter-and-jelly sandwiches? Given how good they will be, probably us.

Bun Goes 24/7, Gives Away Free Late-Night Dinners

Forget falafels and scoops of fro-yo — Bun is unleashing a free-for-all that is so friggin' generous it may well put them out of business. On the nights of May 29 through 31, when the restaurant goes 24/7, customers will dine for free if they make a reservation at the Website for between the hours of midnight and noon. And that doesn’t mean one lousy shrimp roll — it means anything off the menu (which will stay more or less the same), and as many dishes as you’d like, not including booze. Bun is currently hiring for the graveyard shift, but know this before you apply: It’s also integrating a “Server Rating” feature into its Website, so be prepared to grin and bear it when drunken post-karaoking teens mangle the pronunciation of “pho” at 6 a.m.

Boqueria, Scuderia Gallo Approved for Liquor Licenses at CB Meeting

The new Boqueria and Scuderia Gallo, Silvano Marchetto’s new place at 10 Downing Street, both faced the music at Community Board 2 last night, and, while both got approved for SLA licenses, it wasn’t without some compromises, Eater reports. Boqueria promised to close at midnight, and Silvano Marchetto, who as Eater points out has been in the neighborhood for thirty-three years, had to promise to close his new place at 2 a.m., shut the windows at 11 p.m. on weekends, and cancel plans for outdoor tables. The high point of that dispute seems to have been when a neighbor claimed that others like her were against Silvano, but, she darkly hinted, “are afraid of what might happen to them.” Hey, you don't stay in the restaurant game for three decades by being a wimp!

Fabio Trabocchi Plays a Mean Chitarra

One of the most fundamental tools of Italian cooking is the chitarra, or “guitar,” a long board strung with sharp wires used to create handmade pastas. Fabio Trabocchi, of Fiamma, has had his since he started culinary school; he bought it in Teramo, in Abruzzi, and has used it for his entire career. “It’s really like a guitar,” he says. “You have to keep the strings stretched, with the tension just right. But if you use it right, you get pasta that has a certain porosity that you could never get from a pasta machine. That makes it absorb the sauce better and gives it a rustic kind of flavor.” Trabocchi uses the chitarra most frequently on Fiamma’s carbonara, but he’s used it for hundreds of pastas over his career. “It’s from my home region,” he tells us. “I’ll always use it.”

Around 11:54 p.m. last night, while seated at our beloved Balthabar (you know, the bar at Balthazar?), we smelled a strong, unmistakable odor that definitely wasn’t Camembert. We weren’t the only ones: A server walked by saying, “Someone’s got some good weed.” And just like that, the smell was gone. Did it come from the adjacent kitchen, a half-hour before it closed? We’re not saying it did — perhaps the engagement party nearby was taking liberties — but, nevertheless, salmon and hollandaise aside, this bastion of gentility may have a “house smoker.”

Boqueria to Open Second, Larger Location in Soho

For anyone who loved Boqueria, but chafed at its cramped quarters, here’s some good news: A bigger Boqueria is on the way. We called owner Yann de Rochefort to check on rumors about Boqueria, and he tells us, “The new Boqueria will be in the old Kin Khao space, at 171 Spring Street, and will seat about 90 people. We were happy to take over a space with a lot of history; it’s like we’re inheriting positive karma.”

Provence to Close, Be Remade As Haute Barnyard Spot

Provence, relaunched a year ago amid a din of enthusiasm, has already gone under, Pete Wells reports in "Diner's Journal." It will reopen as Hundred Acres, an American restaurant emphasizing (what else?) "rustic, farm-fresh food," according to owner Marc Meyer. “It may have been a mistake to try to maintain the Provençal personality of the restaurant. I realized I can’t interpret Provençal food for New Yorkers. It became a special-occasion restaurant, packed on weekends, but we want a place that people would be happy coming to all the time.” Hundred Acres will open in early May.

Savoy's Branding Iron Is Not Cruel to Crème Brûlée

In most restaurants, crème brûlée is a year-round dessert, but that's not the case with Savoy. The crème brûlée branding iron is heated in the fireplace. That's right: a crème brûlée branding iron. Savoy is defiantly old-school, and refuses to use a butane torch to brown the surface of its custard. Says owner Peter Hoffman, “It adds a nice ‘fireplace flavor’ to the dessert — a subtle taste of wood and smoke that’s infused into the sugar. With a butane torch, you can definitely caramelize the sugar; but you can’t get that fireplace flavor.” There's even a pleasant side effect to the iron's use: A sweet, marshmallowy aroma briefly wafts across the room, no doubt inspiring other diners to order the same thing. Get your branded brûlée this weekend and next. After that, the fireplace goes cold for the season.

Danny A Opens Café Bari to Night Owls

Steve Lewis brings news that promoter Danny A is opening the ground floor of Café Bari to late-night noshing. The name, of course, will be Downstairs, since Danny runs the second-floor lounge Upstairs. The vegetarian pizza will be named after Marquee doorman Wass, the bagel and lox after Mark Baker of Lotus and Mansion, and the chamomile tea after Lewis himself. There will also be a 1 Oak cheeseburger and a Marquee macaroni and cheese. Wait, are they calling these places cheesy?

Tailor’s Menu Reborn, Again

There are two things that have been true about Tailor since it opened: Sam Mason and Fran Derby's food is often brilliant, and the city hasn't really warmed up to it yet. But the restaurant’s menu has evolved, first with bigger portions in December, and it is organized into course “one,” “two,” and “three.” More importantly, both the kitchen and Eben Freeman's bar downstairs have added some characteristically inventive new items.
