Good Fork’s Sohui Kim Bests Bobby Flay

Bobby Flay has taken on any number of hotshots over the course of his Throwdown With Bobby Flay show on the Food Network. But we never thought he would go to Red Hook to challenge the Good Fork's Sohui Kim in the art of cooking dumplings. That was the case on Monday’s show, which ended, we are happy to report, with a resounding win by Kim on her home territory. Because your street cred is everything in Red Hook.

Each week, we highlight one of the city’s great but relatively obscure young chefs.

Name: Sohui Kim

Age: 37

Restaurant: The Good Fork

Background: Kim had a false start in a publishing career, but decided to go to the Institute of Culinary Education, afterwards training with Michael Anthony and Dan Barber at Blue Hill and with Peter Hoffman at Savoy. Kim put in time with Anita Lo at Annisa, and then Italian Wine Merchants with Anne Burrell. After all that, there was work in catering, food styling, and recipe testing, before finally opening up the Good Fork with her husband, Ben Schneider.

Zagat 2008 Smiles on Daniel, Gordon Ramsay, Others

New York’s little red book, the 2008 Zagat guide, is out today. It is more significant to the restaurant world than the Michelin guide, and for good reason: The same people who use it are the ones who write it. So what if it’s a popularity contest? Life is a popularity contest. There were some minor shakeups in this year’s rankings, such as Union Square Cafe retaking its sibling Gramercy as most popular restaurant, and Daniel retaking the top spot in cuisine from Le Bernardin. But the more interesting points required a slightly closer look.

Why Is Alan Richman So in Love With Brooklyn?

Given that Alan Richman has become a kind of professional debunker, the Amazing Randi of the food world, it was with some relief that we read his critical overview of Brooklyn in the new issue of GQ. The verdict: Brooklyn rules! Gramercy Tavern, Jean-Georges Vongerichten, and the cities of Las Vegas and New Orleans, all victims of his scorn over the last few years, must be fuming.
