Danny Meyer: ‘You Can Stand Under My Umbrella’

Jill Santopietro, recipe editor and food stylist at the Times, isn’t crazy about the service at Danny Meyer’s restaurants: “I have had rushed and rude service at Union Square Cafe and the Modern. On a recent visit to Eleven Madison Park, the servers were attentive and professional but a little stiff, like dancers who aren’t quite sure of their steps.” Nevertheless, she beams about Danny Meyer because one rainy day, she was given a free Eleven Madison Park golf umbrella. It’s just one of the many little touches that make the man Mr. Hospitality — our personal favorite being the note that Michael Romano encloses with doggie bags at Union Square Cafe.

Union Square Cafe Waiters Are Poets and They Know It

We’re not sure how we missed this "Talk of the Town" piece in last week’s New Yorker — obviously we were distracted by “A Man of Taste,” D.T. Max’s fascinating profile of Grant Achatz and his fight against tongue cancer — but it’s worth a read: General manager Christopher Russell is apparently the John Keating of Union Square Cafe, since he convinced his staff members to begin every day in April by sharing a favorite poem. Last year a waiter composed a rap about calamari and Billecart that eventually became the company’s video holiday card. Trust us, we’re trying to get a copy.

Astoria: The Sparrow and Fatty's serve two very different takes on burgers. If you like a traditional patty, choose the latter though, as the jalapeño turkey burger at Fatty's is relatively "glitzy." [Joey in Astoria]
East Village: A cool-looking spot called Black Iron Burger Shop is opening at 5th Street between Avenues A and B. Start looking forward to grilled burgers; "How can you name a place that and not grill them?" [A Hamburger Today]
Fort Greene: Brooklyn Flea–goers on Sunday may have noticed the waffles being reheated and sold by the Wafels & Dinges stand were from Augustin's Waffles in New Jersey. But don't worry! Danny Meyer Has One Last Feast at Florent

Danny Meyer says his weight hasn’t shifted more than three pounds since high school, but his empire, at least, is growing: He recently secured a catering deal with the Puck Building, he’s vying to serve food at Citi Field (“it’d be a nice thing to have a pulled-pork sandwich while watching a game,” he tells us), and he’s aiming to open an Upper West Side outpost of the Shake Shack by the end of the summer. Meyer has monthly meetings with his chefs, but he rarely has a sit-down meal at one of his own restaurants (he eats at Union Square Cafe a couple of times a year and prefers Blue Smoke because it’s dark and he can go incognito), so we asked him where he does eat and whether he has to wait in line for Shack Burgers.

Danny Meyer Cuts Wild Edibles Free

The foie gras protests outside Union Square Cafe may not have put a dent in anything, but we’ve just received a press release indicating that Union Square Hospitality Group will no longer use embattled Wild Edibles as its seafood provider, joining Keith McNally's and Jean Denoyer's restaurants in the snub. The release nods to the “courage” of ten workers who were let go after they filed a suit claiming they were stiffed on over time pay.

New York’s little red book, the 2008 Zagat guide, is out today. It is more significant to the restaurant world than the Michelin guide, and for good reason: The same people who use it are the ones who write it. So what if it’s a popularity contest? Life is a popularity contest. There were some minor shakeups in this year’s rankings, such as Union Square Cafe retaking its sibling Gramercy as most popular restaurant, and Daniel retaking the top spot in cuisine from Le Bernardin. But the more interesting points required a slightly closer look.

Wild Edibles Gets Caught in the Net of the Law

In the latest labor-law fiasco, thirteen employees of Wild Edibles, which sells seafood to restaurants like Union Square Cafe and Pastis as well as the general public via its retail stores, have filed a lawsuit against the company for failure to pay overtime. According to the plaintiffs’ lawyer, David Rankin, and as is evident in copies of the complaint we’ve obtained, the individuals — most of them warehouse workers — worked in excess of 50 hours a week for flat wages varying from $450 to $550 (“right on the edge of minimum-wage violations,” Rankin says, though he decided not to pursue those charges). Rankin also says that four workers were unjustly fired after they requested overtime pay at the end of August, and that another worker was unfairly written up for stealing fish. A motion for a restraining order, which we’ve also obtained, will be heard in court tomorrow. Between the overfishing and underpaying, caviar is truly getting hard to swallow.

Park Slope Gets Its Own Pastry-Chef Spinoff

Now that star pastry chefs are spinning off their own restaurants (Sam Mason at Tailor, Pichet Ong at P*Ong), it’s high time that some of the less famous names have the chance to do the same on a smaller scale. Hence Emily Isaac’s journey from being the pastry chef at Union Square Cafe to her new place behind the counter of her own bake shop in Park Slope. Trois Pommes Patisserie, which Rob and Robin include in this week’s Openings, has twelve seats and an open kitchen where Isaacs cooks up “greenmarket-inspired fruit pies and ice cream,” not to mention a wide selection of other pastries. The iced coffee is pretty good too.

Chef Jason Neroni leaves Porchetta, citing “irreconcilable differences,” and claiming that pastry chef Mandy Brown and “most of the kitchen staff” are leaving with him. We don’t know the details (yet), but this seems pretty harsh: The restaurant gave him absolute creative license, as far as we can tell, for as long as it’s been open. [Eater]
