Lure Chef, GM Victims of OfficeMax Prank

In an especially cringe-worthy viral video recently posted on YouTube, some bearded buffoon shows up at Lure and attempts to pay for his meal with a sack of pennies. The idea was to promote OfficeMax’s penny sale, but the video inspires us mostly with wrath and loathing at the chain for causing us to squirm so. There are a few comic highlights, though, especially salty chef Josh Capon coming out and telling the guy, “How about you come in here and order a steak, and I take the steak and put it in a blender, and I give you the steak in a milk shake?” A telling analogy, but one the prankster refuses to accept. Eventually, an incensed Capon says “This is dumb, and you know it!” Indeed — alas, neither he nor manager Robert Collins knew that they were victims of a viral campaign. But if you want to get a stapler on sale, there must be sacrifices.

Video: A Summer Fish Grill With Eric Ripert

With the possible exception of the god Neptune, no one has authority over the fishes of the sea like Eric Ripert, the chef at Le Bernardin. Taking over the big grill last week at Harry's at Water Taxi Beach, the Ripper showed us how to cook black bass on a piece of slate. It was a new method to us, but after tasting the results, we'll never grill fish another way again.

Florent’s Last Supper

Florent celebrated its final night of service on Saturday (last night was a friends-and-family party), and the evening was a wakelike mix of joy and sorrow. In talking with regulars and floor staff, New York's Tim Murphy learned that some didn't know of Florent's quasi-resurrection next week (same menu and staff, claims landlord Joanne Lucas) and one employee said no one had approached the kitchen crew about staying on. But Saturday considered the past, not an uncertain future. There was food, there was music, and there was unfeigned adoration of Florent Morellet.

What happened at Sunday's friends-and-family night? New York's David Amsden was there.

New Yorkers Know the Calorie Count, But Do They Care?

While restaurant trade groups fight a city law requiring chains to post calorie values on menus, Chipotle, Starbucks, and Subway have already complied. But even when the number is right before your eyes, do calorie counts change the way New Yorkers consume? Make PDT’s Bacon-Infused Old-fashioned at Home

In the magazine this week, maple syrup was a key ingredient in the "In Season" recipe. Don Lee of PDT may use maple syrup to make his old-fashioned, but we couldn't get past the bacon-infused bourbon that is the base of the drink. Bacon? Bourbon? We're in. And since we took our camera to PDT yesterday to watch Lee prepare the drink himself, we can all practice at home. Frequently.

Rachael Ray Feeds Sicko YouTube Fantasies

Yesterday, "Page Six" ran a blind item asking which “daytime gabber” snips at staffers for bringing her the coffee she endorses rather than Starbucks. Hmmm, wonder who that could be? Speaking of Rachael Ray, yesterday also saw the debut of two YouTube videos taking the stuffing out of the impish toque. One of them imagines Anthony Bourdain stealing her nose and serving it stuffed with foie gras. We’re not sure how that qualifies as a “mildly erotic parody,” as advertised, but we can tell you that the other video, “Rachel Ray Is a Sex Freak” [sic], is safe for work only if you have headphones, since it uses audio to imagine Ray teaching sex education to New England debutantes. Yucko!

Thanksgiving for the Chronic Procrastinator

The next best thing to Grub Street video.

Given how inevitable ruined turkeys and last-minute rat plagues are, it's no surprise that we are frequently called upon to suggest emergency Thanksgiving takeout options. Obviously, there's always General Tso and his sparerib armies, but thanks to a cutthroat restaurant marketplace, there are actually a number of places around town that can supply you with a same-day Thanksgiving meal. We enumerated four of them yesterday morning on Good Day New York and see no reason why Grub Street readers should be denied the same guidance. Happy Thanksgiving to all Grub Street neighbors! What’s the best way to pan-roast a four-pound chicken? First you have cut it into four manageable pieces. If tearing through tendons makes you want to order in, we have the video for you. ‘Culinary Conductor’ and ‘Love Chef’ Woo Rocco Online

You probably don’t care that Rocco DiSpirito will be hosting a cooking show on Bertolli’s Website, but the people who are auditioning to be his co-host sure do! As you might guess, there are a few oddballs in the bunch: In one video, Jernard “The Love Chef” and Rocco’s self-described No. 1 fan promises to “spread love all over the kitchen,” only to bark out his cooking demo like a drill instructor. Then there’s Nicole Navarro, a retired Vegas showgirl “inspired by culinary” who, as if to make up for her use of “culinary” as a noun, ends her demo with a high leg kick.
