“In the series, Chuck lives in the hotel, and so the writers had Gilt as his go-to restaurant. They wanted to have him get a truffled grilled cheese sandwich and asked me how I would do it. If I were eating it, I’d have Italian Fontina cheese. It’s traditional with white truffles. So that’s how I made it. The bread is a brioche made here by our pastry chef and is really crisp and delicate.”

“The fries aren’t our black-truffle fries cooked in olive oil. That would be too much. I’d be going broke on this dish—which I am already! They’re just fries with salt, pepper, and chives, and dressed with a little truffle oil.”
