In the space formerly known as Brasserie 44, The Royalton decided to shake things up—or stir things up, depending on your preference—by hiring star bartenders Richard Boccato (Dutch Kills and Pain Killer), John Lermayer (from the Florida Room in South Beach and Woodward in Boston), Simon Ford, Willy Shine (who also had a hand in Painkiller), Misty Kalkofen, and Eric Alperin to turn their hotel lobby space into a tippling destination. The so-called Cocktail Collective's menu focuses on pre and post prohibition cocktails with both originals and a “Classics” section paying homage to hotel bars around the world. A square bar will makes sure the $15–$17 libations are front and center.
