The sister bar of Flatiron’s Aspen has wood jutting out from every direction—lots of it scrounged from a Pennsylvania barn. In the back room, a nifty system of mirrors creates a visage of endlessly repeating tree trunks. A deer head is mounted on the wall and a hurricane of antlers form a chandelier. The tequila-heavy drink selection is upscale and up-priced, suiting the crowd of upwardly mobile just-beyond-youngsters. Those wondering what people eat in Colorado will be intrigued by the bison sliders and Hunter Thompson–inspired “gonzo sauce” on the otherwise pretty standard menu of comfort food and pub grub.
