The reborn Boots & Saddle has retained some cowboy paraphernalia and its kitschy ways—but heavy renovations have left blond-wood wainscoting, pale brown walls, and even the occasional vase of flowers in their wake. The new, streamlined furnishings are frequently dressed up with decorations for the next major holiday. Flat-screen TVs are mounted along the walls, and a 240,000-song Internet jukebox in back is a bid to include the iPod-addled among the kibitzers here, who tend to be middle-aged or older, friendly, and quick with a lighthearted wisecrack. The majority of the crowds come on weekends. With several small tables and seating along the wall as well as at the bar, it's easy to stake out your own territory to plan out the rest of the evening.
