Colorful murals, a rotating art display, Victorian chairs and Chinese lanterns make Bleu Evolution feel like a cross between a thrift shop and a funky Seattle coffeehouse. A small bar-food menu is served by super-friendly waiters in the bright lounge area, which consists of a tall, tiled bar, a raised living room set and a couple of closely placed tables with high-back thrones. Drinks are standard but inexpensive, and the house wines are more than decent. After work, the crowd is older; later in the evening, young folks raise the noise level a bit but manage to maintain Bleu's quiet elegance.
