Leave it to dreamer Greg Brier of Jet Lounge and Aspen to challenge the Dream Hotel’s rooftop bar with a space in the Amalia restaurant’s basement. Down a staircase of illuminated stained-glass is what looks like a hyper-glamorized wine cellar: groin-vaulted ceilings with crystal chandeliers, glazed brick walls with gilded mirrors. The clientele sprawls out on banquettes of chocolate leather (a fabric that reappears on the bathroom walls), all the while sipping from small flutes of "eau de vie" or dining on food from Adam Ross's upstairs kitchen. Maybe its location will work in its favor; D’Or is subterranean so it feels like a secret. — Daniel Maurer
