The Eldridge's Matt Levine takes over Wainscott's former Saracen space, bringing his LES-club vibe to the Hamptons restaurant's preppy white-washed walls. Levine infuses the space's classic beach feel with his own crowd of Manhattan scenesters and models, avoiding the in-your-face glitz of competing standbys like Pink Elephant and Lily Pond. The décor is simple: navy banquettes, votive candles, and subtle lightingbut even though it looks like an inviting beach house, don't show up without a reservation. It's still all about who you know and how pretty you are, and not how much you're willing to slip the bouncer. Levine’s parties take over at midnight on Saturdays, when Hell’s Kitchen chefs Robert Hesse and Seth Levine, who now run the Modern American restaurant, make their exit. The summer lineup consists of Jesse Marco, DJ Ross One, and Mean Machine.
