Sali Shibilo, a six-year managing veteran of Penang in Soho, opened a bar that, true to its name, offers a bubbly made with Mauzac grapes. There are also over 30 other varieties of wine chosen mainly by Shibilo, who says she drinks enough of it to know what she likes. Also on offer: rotating platters ($12 to $17) of charcuterie, cheeses from Murray's Cheese Shop, and an assortment of bite-size pizzas ($5) by Dufour Pastry Kitchens. The 20-seat space has exposed brick walls, an intimate nook, and a warm copper-coated bar. “I didn’t want it to be stuffy,” says Shibilo — hence large windows looking out toward the park and a neat mirror trick that makes the bar look bigger.
