Rogue and Canon aims for that sweet spot between friendly and affordable but still with some foodie edge. It manages this by showcasing “Rogue” concoctions and spirits, as well as traditional pub fare—the “Canon.” There’s a delicious selection of American craft beers, but the mixological masterpieces showcase inventiveness: the “6 Feet Under” combines root liquor, everclear, ginger ale and chocolate bitters, and the Russian Firing Squad—their take on the Moscow Mule—gets an added zip with muddled lime and pomegranate molasses. That same pattern repeats with the food—sure, there’s standard grub like deviled eggs and hanger steak. But there’s also spicy lo mein, and the soon-to-be famous Rogue Burger: yes, the combination of beef, cheese, peanut butter, and pork belly sounds like the work of a demented 6-year old. But take it from us: it’s the work of a demented 6-year-old genius: the combination of salty and sweet turns this beautiful trainwreck into something much more than an attention-grabbing gimmick.
