Profile

On a quieter stretch in Williamsburg away from the bustle of Bedford Ave., the Saint Austere is a neighborhood boîte with a self-styled Old World European flair. Opened by the four Pirolo siblings, the bar eschews hard liquor altogether, focusing instead on a carefully selected list of European-imported beers and wines as well as a food menu designed by brother Michael, former Chef de Cuisine at Scott Conant’s Scarpetta in Miami. Though the steel bar may nod to the spot’s name, the rest of the setting is anything but austere: warm lighting, communal high top tables, exposed brick and vintage-y wallpaper complement the intimate space. Cozy up to friends and strangers alike at one of the communal tables for a glass of wine and lusciously creamy polenta with sausage and cipollini ($10)—you won’t miss not having a cocktail.
