A protégé of dry-cutting master John Sahag, Eiji Yamane wards over a team of seventeen stylists and nine colorists at this enormous, loft-like salon, which boasts a client list that includes Catherine Zeta-Jones and Sarah Jessica Parker. Watching Eiji at work—a wisp of a man with flowing, wavy locks—it’s hard not to get caught up in his intricate technique; he moves around his client’s head with such quick, mesmerizingly deft movements that he appears to be following some kind of inner choreography. The resulting architecturally defined, layered cuts—which take, on average, an hour-and-a-half and cost $350—reportedly last for up to six months. Several signature hair services are also offered, but the most decadent is the Japanese Water Treatment, a scalp massage with volcanic-mountain spring water that Eiji “smuggles” in from his home country.
