Longtime stylist Helik Torres opened Ernest & Olivia in August 2010, naming the two-room barbershop and boudoir-style salon after his business partner’s children. The masculine front room, outfitted with five barber chairs (reclaimed from the St. Regis), and a small wooden bar equipped with an espresso machine and booze, is where the two barbers on staff offer men’s haircuts and hot towel shaves. The back room, outfitted with rich green-and-cream-striped wallpaper, is decidedly more feminine, with an antique-style chair (picked up from an estate sale) and adjacent courtyard. Here in one of the two stylist chairs, Puerto Rico–native Torres and two other stylists/colorists tend to the ladies, snipping and coloring, using the ammonia-free coloring brand Inoa, and Devachan and Redken styling products. Having worked in Soho for a number of years at Dop Dop and Devachan, as well as on shoots for clients like Saks Fifth Avenue and the Gap, the amicable Torres has a knack for working with curly tresses, knowing what layers to snip so curls frame the face without adding bulk or frizz.
