This six-seat Flatiron salon combines upscale service with an affable informality. In business since 1993, Sacha & Olivier specializes in dry cuts—allowing the stylists to study the turn of a curl or the fall of a layer before swooping in with shears. Parisian owners Olivier Mikhailoff and Sacha Cohen work every day alongside four other stylists. (Expect a $50 to $60 price bump to be snipped by one of the namesake duo.) Whether for signature cuts, Japanese straightening, or highlights and coloring, the sleek but cozy salon draws a steady stream of regulars—few of whom leave without a cheery wave and a kiss on each cheek. Haircuts are followed with the typical wash and blow-dry, and Leonor Greyl and Rene Furterer products are used generously but judiciously.
