You’ll bite your nails and lick your lips at D. A. Pennebaker and Chris Hegedus’s grand documentary, Kings of Pastry. It’s yet another depiction of top chefs going for it, but here’s the thing: They’re not competing against one another. They’re doing it for art. They’re going for the Meilleurs Ouvriers de France, the MOF, to earn the right to wear the red-white-and-blue collar; and to pull that off, they need to run a grueling three-day gauntlet in Lyon, making everything from cream puffs to huge, elaborate sugar sculptures. Scream when the sugar sculptures drop. Fight tears along with a presiding judge as he announces the new MOFs. The one drawback: We don’t get tastes.
