Garlic-Almond Soup

Ingredients

¼ cup safflower oil
½ cup garlic, peeled, sliced 1/8 inch thick
½ cup shallots, peeled, sliced 1/8 inch thick
3 cups almond milk
½ cup tomato water (see recipe)
Sea salt and ground white pepper to taste

Instructions

Add the safflower oil, garlic, and shallots to a wide-bottomed pan. Sweat on medium-high heat for 10 to 15 minutes, stirring constantly. Add almond milk and tomato water, boil, then remove from heat. Add salt and pepper. Pour the almond-garlic soup in a blender and process on high for 1 to 2 minutes or until smooth. Strain through a fine-mesh sieve. (Published 2015)
