3 tablespoons grapefruit zest
3 cups sugar (preferred: evaporated cane sugar)
1 cup sage leaves, loosely packed
Stir zest into sugar roughly. The sugar will become like a thick paste with some dry areas. Let the mixture rest at least 3 hours, or overnight.Stir the sage leaves into the sugar mixture and let sit 5 minutes. Add 3 cups boiling water and let the whole mixture steep for 7 to 10 minutes more.Strain and bottle. The syrup will keep in the refrigerator for two weeks.
