.25 oz. Falernum
.5 oz. House-made ginger syrup
.75 oz. Fresh lemon juice
.5 oz. Black Strap rum
1.5 oz. Bermuda rum
The white of one egg
Soda water
Espresso coffee grinds


Dry shake (shake without ice) to emulsify the egg white, then shake with ice and strain into a chilled water glass. Gently top with soda, and sprinkle espresso grinds on the head of the cocktail. Express the oils of a long orange peel over the cocktail, and serve. (Published 2010)
