2 ears fresh corn
2 tbsp. crema Mexicana
1 tbsp. cotija cheese
Cayenne pepper
1 lime

Remove husks and place ears of corn on hot grill.
Turn slowly and cook until light brown marks appear on corn.
Cook until mostly charred for truly authentic corn.

Then slather with grated cotija cheese.
Add cayenne pepper to taste.
Squeeze juice of ½ lime over corn. Note: This is the most important ingredient! (Published 2008)
