1 egg white
1 1/2 oz. gin
1 oz. fresh lemon juice
1/2 oz. Aperol
1/2 oz. simple syrup


In a shaker, shake 1 egg white until frothy. Add 1 1/2 oz. gin, 1 oz. fresh lemon juice, and 1/2 oz. each Aperol and simple syrup. Shake vigorously with ice and strain into a small fizz glass and top with fresh seltzer or soda. (Published 2011)
