Smoked-Whitefish Salad

Ingredients

1 small smoked whitefish (about 2 lbs.), skin and bones removed

2 cups finely diced pickled vegetables, preferably asparagus or cucumber

3 stalks of celery, finely chopped

1 small red onion, finely chopped

¼ cup chopped dill

5 scallions, finely chopped

Juice of 3 to 4 lemons, to taste

½–¾ tbs. freshly ground pepper, to taste

¼ cup extra-virgin olive oil

Instructions

Combine all the salad ingredients in a large bowl, and mix together thoroughly with your hands. Add more lemon juice to taste, if needed. (Published 2014)
