Mt. st. Francis (r) goat, greenville, in, capriole farm, judy schad. peee-ewtiful, this oozy stinker grabs hold of your palate and won’t let go. not advised for a first date. probably not a second either (unless you got to know each other real well on the first.)      
Hooligan (r) cow, colchester, ct, cato corner farm, elizabeth macalister. we probably don’t need to tell you about this cheese because you can probably smell it where you’re sitting. earthy and fungal in the extreme. a great snacking cheese at hockey games and violent protests      
hard
Pleasant Ridge Reserve (r) cow, dodgeville, wi, uplands cheese co., mike and carol gingrich. dense, nutty, with a sweet musty finish, this award-winning cheese is a powerhouse of flavor. the official cheese of the world wrestling      
Tumalo Tomme (r) goat, redmond, or, juniper grove farm, pierre kolisch. easy on the eyes and the palate, this gentle goat pairs well with everything and gets along with nearly everyone. though it has no recognized psy      
Magic Mountain (r) sheep, weston, vt, woodcock farm, gari and mark fischer. supple paste, lactic and nutty. a sheep’s milk twist on a traditional gruyere recipe. eaters of this cheese are more likely than the population      
Ouray (r) cow, poughkeepsie, new york, sprout creek farm, brent wasser. mild saltiness with a long, rich, creamy finish. as amiable as a bar mitzvah boy after his first taste of manischewitz

Maytag Blue (p) cow, newton, ia, the maytag family. yes, it’s the same family who started the washing machine company, but there’s nothing industrial about this cheese. handmade and aged in caves, this pioneer of american farmstead cheese is bright, clean and creamy      
Westfield Classic Blue (p) goat, hubbardston, ma, westfield farm, bob stetson. a bucky chevre covered in a beautiful shade of sapphire. may cause you to burst into song. for me, it was reo speedwagon’s classic anthem "can’t fight
