Alchemy, Texas follows a long chain of Lone Star–style barbecue spots tucked into the back of Legends Sports Bar in Jackson Heights—first Pearson’s, and then Ranger Texas. The kitchen is outfitted with an oversize rotisserie smoker that is used by expert pitmaster Josh Bowen (Josh Bowen, Hill Country). The décor is simple: Paper towels and styrofoam plates sit on red-and-white-checked tablecloths under bright, fluorescent lights, while New York City team pennants and flatscreen TVs line the walls. But the barbecue isn’t as basic. Goat ribs, pork belly, and Spam join the usual meats, which all marinate in a mix of chamomile, Founders breakfast stout, red wine vinaigrette, and saffron—and a piece of foie gras contributes to the fat content. Texturally, the brisket has a nicely charred crust along tender meat, but it doesn’t hold the smoky flavor as well as the crispy skinned chicken, available in dark or white pieces. The beef short ribs, while pricey, are noticeably more flavorful than the pork spare ribs and beef back ribs, both on the bone. The daily rotating menu may also include prime rib, sausages, chopped beef, and large, spicy wings, all served with thick Wonder Bread slices and drinks from Legends’ full bar.
