Perch at a cowhide-upholstered banquette or leather armchairthe whole place has a distressed, repurposed look, enhanced by views of aging cheese wheels. As you settle in, super-friendly servers (the company and much of its staff originates in Seattle) appear offering a taste of the wine of the day. Should you opt for something else, know that all vinos are domestic, as is the selection of Beecher's and other cheeses.
