The lowdown

While the City Bakery has become a Manhattan landmark, its Birdbath offshoots have functioned more as pop-up satellites of varying design and duration for the brand’s eclectic selection of seasonal salads and signature pastries. The Soho location has the advantage of occupying the former premises of the legendary Vesuvio bakery, and to the perpetual confusion of guidebook-toting tourists, the familiar facade has barely been altered. If you wonder what makes Birdbath a “green” bakery, it’s the sustainable, largely repurposed building materials, the emphasis on local and organic ingredients, and the fact that fresh-food reinforcements are delivered from HQ by rickshaw bicycle.
