This fifteen-seat restaurant, which staffs two, doesn't have a full kitchen. Instead, sushi chef and owner Sho Boo (an alum of both Sushi Yasuda and Jewel Bako) turns out Japanese tapas-style small plates with just a rice cooker, two burners, and a microwave. Judging by taste and presentation, you’d never guess the dishes here were crafted in such a minimalist setup. There’s an assortment of salads and small plates, like simmered pork belly and a knockout Japanese pancake stuffed with fresh seafood, but the chef's experience and point of view really shine in the thoughtful sushi arrangements, which are the highlight of Bugs's two tasting menus. Notably fresh pieces of nigiri, ranging from scallop and sweet shrimp to fluke, are individually paired with salts and sauces to render each bite unique. As for that wacky name? It's garnered so much curiosity that signs are now posted on each table and above Sho Boo's workspace explaining its origins: "Just like bugs get together, I wanted to have a place for people."
