It took three and a half years for the owners of Chuko to go from announcing their Bushwick expansion to opening the doors to their Evergreen Avenue ramen shop. (That, for the record, is longer than many a restaurant’s lifespan.) But for neighborhood noodles fans, even with options like Ichiran popping up during that time period, its arrival was worth the wait. The space has big windows to let in light, and its minimalist design is refreshed by colorful and clean design that decorates the wall behind the bar. While Ichiran serves just one bowl of ramen in ultra-porky, creamy tonkotsu, Chuko specializes in lighter, subtler styles like soy, miso, chicken bone, pork bone, and a nontraditional kimchee. The vegetarian variations are packed with a double dose of produce, including Brussels sprouts, kale, sweet potatoes, and other vegetables. As in Prospect Heights, ramen is just one part of the menu. The Morimoto vets running the show here also offer dishes like shrimp buns with garlic tartar sauce, wings in a chile-soy sauce that borders on cloying, and okonomiyaki-style tots, among other dishes.
