Diner’s Journal reports that pop-up papas Alan Philips and Jason Apfelbaum are taking over operations at the Hotel on Rivington, where Matt Levine has held court. Executive chef John Keller comes from Le Bernardin and Nobu, and sushi chef Stephen Wong comes from Sushi of Gari: “In addition to Co-Op, Mr. Philips and Mr. Apfelbaum are setting up a tequila bar and taqueria, and a raw fish and sake bar in the hotel, and, on the hotel’s roof, a yet-to-be-decided pop-up space.”
