A former chef from the Pines, a fromager from Casellula, and a wine director from Triomphe have come together for this casual 53-seater in Williamsburg. There’s an 80-bottle wine list and a cheese menu featuring picks like spruce-wrapped Jasper Hill Harbison a smooth “tubby” cheese aged in Brooklyn. Decorated with black walnut tables, ornate white tin tiles, and a heavy marble bar in the back, the place serves up cheese plates (of course) alongside salads and small plates. Counted among the last is a hearty French onion-soup-inspired toast, made with oxtail and creamy Timberdoodle cheese. Don’t know where to start with all that wine and cheese to choose from? The friendly staff will gladly recommend their favorite pairings.
